Sambhar

Like in north we make tuwar dal (Arhar Dal) with rice or roti similarly in south people like eating Sambhar with rice, idli's, dosa, uttapam etc. Sambhar has a great combination with all the south indian dish. Basically sambhar is a south indian way of preparing lentil. It is very delicious and nutritious as it is made up of tuwar dal and different variety of veggies.

Ingredient
  • 1cup tuwar dal or arhar dal
  • 1 chopped Tomato
  • 1/2 cup diced lauki (Long gourd)
  • 1 chopped onion
  • 2 tsp Sambhar Masala
  • 1 tbsp Tamarind paste
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • Water
  • Coriander leaves for garnishing
For seasoning
  • 1 tbsp ghee
  • 1/4 tsp Asafoetida 
  • 1/2 tsp mustard seeds
  • 5-6 curry leaves
  • 2 dry red chilli
  • 1/4 tsp red chili powder
Method
  1. Wash the dal properly 2-3 times with water and soak it for 1/2 an hour.
  2. Now take pressure cooker, add dal, tomato, onion, lauki, salt, sambhar masala, turmeric powder and water to it. Place it on medium-low flame and give 3 whistles to it so that dal is mashed properly.
  3. Now prepare seasoning. Take ghee and heat it up. When heated add mustard seeds and asafoetida powder to it. 
  4. When crackling of mustard seeds stops then add curry leaves, dry red chilli and red chili powder to it. Keep it aside.
  5. When dal is ready and tamarind paste to it. Mix it well and add the prepared seasoning to it. Now place it on low flame for another 5-6 minutes.
  6. At last garnish with coriander leaves and serve hot with idli, dosa, uttapam, rice etc.
For Tamarind paste:
Soak Tamarind in water for 1/2 an hour. Now with the help of muslin cloth or strainer strain the tamarind so that its pulp comes out. Your Tamarind paste is ready.
